Leche Flan

1 big can evap
1 can condensed milk
1/2 tsp lemon
1 tsp vanilla
7 egg yolks
1 whole egg
Strainer
Bain marie pan with 1/3 water
1/2cup sugar with 1/4cup water
Bake for 30-45 mins. 45max.

TAPA QUEEN HACK

Got this from pepper.ph. The perfect tapa recipe that my hubby loooves. 

Ingredients

  • 1 kg beef sirloin, tapa cut
  • 1/2 cup soy sauce
  • 1 tsp tenderizer (optional)
  • 1/3 cup brown sugar
  • 3-5 pcs bird’s eye chili, chopped
  • 1/4 cup crushed garlic cloves
  • Ground black pepper
  • Oil, for cooking

Procedure

  1. Mix together soy sauce, tenderizer, brown sugar, chili, garlic, and black pepper.
  2. Marinate beef in the mixture overnight.
  3. Heat oil and pan fry beef slices in batches.
  4. Serve with garlic rice, fried egg and atchara.
I boil a cup of water first in the frying pan and put the marinated meat until liquid is reduced. When already dry, put a tbsp of oil and 1 tbsp of butter and fry the meat.

Java Rice

Ingredients:
4 cups cooked rice (overnight rice is better)
2 Tbsp. melted butter or margarine
2 Tbsp. cooking oil
1/2 tsp. annatto (atsuete) powder or 1 Tbsp annatto seeds
3 cloves crushed garlic
1 Tbsp soy sauce
1 Tbsp tomato catsup
salt and pepper
How to cook Aristrocrat Style Java Rice:
  • Heat oil in a wok and add annatto powder. In case you are using annato seeds, heat the oil gently while stirring the seeds until the oil becomes orange. After 4 minutes, discard the seeds.
  • Adjust the heat to medium and add in the garlic and saute until slightly brown.
  • Add in the butter and cooked rice and stir fry for a few minutes until all the grains are coated with the annato oil and the rice becomes yellow in color.
  • Stir fry with a mixing motion until all the rice lumps are gone and the color is even.
  • In the meantime mix the tomato catsup and soy sauce in a small cup before pouring it over the rice.
  • Depending on your taste, you can add more soy sauce and tomato sauce.
  • Pour soy sauce catsup mixture over the rice and continue to stir fry until the mixture coats all the rice grains and the color is evenly distributed. Adjust the heat to high if necessary.
  • Season with salt and pepper while stir frying the rice. You can also garnish it with fried garlic.
  • Serve hot with barbecued pork or chicken or grilled fish or seafood.

Pork/Chicken Barbecue

My version:

1lb pork butt bbq
1/2 cup soy sauce
1/2 cup sprite
1/4 cup banana catsup
1/4 cup brown sugar
lots of garlic
2 tbsp lemon juice
1/2 tsp salt
1/4 tsp pepper
poke the meat and marinate overnight.

use very little cornstarch for cooking the marinade. baste when almost done.

Ingredients

Barbecue

10 pcs chicken legs and thighs
2 tbsp oil
2 tbsp cornstarch
½ cup water

Marinade
1 cup tomato catsup (it’s called tomato sauce here in NZ)
1 can 7-Up or Sprite
1 cup Philippine soy sauce
½ cup sugar
1 whole garlic, minced
3 tbsp lemon juice
1 tsp freshly ground black pepper

Instructions

In a deep bowl, mix thoroughly all marinade ingredients.

Prick chicken with fork several times then coat them with marinade, set aside and keep in a fridge tightly covered for at least 24 hours.

Remove chicken from the fridge, it should be in room temperature before cooking. Drain chicken of its marinade, reserve the liquid.

In a sauce pan, mix water and cornstarch until free of lumps then combine with the separated marinade and oil.

Cook the sauce and simmer until it thickens.

Prepare your charcoal barbecue then grill your chicken, don’t baste at this stage it will burn the chicken due to the sugar content. When chicken is nearly cooked baste chicken with the cooked sauce and cook for one more minute on each side. Serve with Java Rice andAtchara.

Spinach and Cheese Egg muffins

This is my half recipe. I actually made 8 muffins.

6 eggs
2 cups spinach
4 pcs bacon
minced onion
1/4 cup cheese.

  1. Preheat oven to 350°F and spray cooking spray in a muffin pan. Set aside.
  1. Beat together eggs. Add the shredded cheese and stir to combine. Set aside.
  1. In a frying pan on the stove, cook the onion and bacon over medium heat for about 10 minutes. Add in spinach and stir to combine. Cook for about 3 minutes or until spinach is wilted. Remove from heat and let cool for five minutes.
  1. Add spinach mixture to the egg mixture and stir to combine. Ladle the egg mixture into a muffin pan being careful to not overfill the muffin cups. Cook for 15 minutes.
  1. Remove from oven and let cool for 5 minutes before removing from the muffin pan. I found it easy to loosen the sides of the muffins with a butter knife and then gently remove them with a fork. Makes 12 muffins.

Chocolate Chip Cookies

1 block butter
1 cup brown sugar
3/4 white sugar
2 eggs
1 tsp vanilla
2 cups flour
1/2 baking soda
1/2 tsp baking powder
1/2 salt
1.5 cup semi sweet choco chip
Chill the batter for 30mins

360degrees. 12 minutes.
Cool in rack.

Bangus Sardines Spanish Style

4 pieces bangus
2 cups olive oil
1 can black olives
2tbsp salt, hot red peppers, bay leaves, carrots
1 cup vinegar and pickles
Pressure cooker for 1 hour. Keep the yellow button of pressure cooker elevated for maybe 5 minutes and simmer on 2.

Should be fork- tender and fish bones soft and edible.
